How do you get 16 oz of spinach to be yummy for everyone - so much so that your 17 month old asks for it for dinner and breakfast? Spinach Squares! I guarantee that the whole family will enjoy them.....seriously.
1 Cup Flour (could use Whole Wheat flour)
1 Tspn Salt
1 Tspn Baking Soda
2 beaten Eggs
1 cup milk
1/2 cup chopped onion
3 cups cheddar cheese (I like a combo of sharp and mild)
16 ounce pkg frozen spinach (thawed and drained)
Mix all together and place mixture in greased 8 by 11 (or similar) pan. Bake at 350 for 30-35 minutes. Cut into squares and serve warm.
And why not throw in some flax seed while we're at it? Sure...I think this might be a weekly hit. He wanted this more than Mac and Cheese!
